The Geisha coffee from 'Cerro Azul' stands as the crown jewel among the five farms owned by Rigoberto Herrera and his brother Luis. They helm a family business rooted in a legacy of three generations of coffee cultivation, with Cafe Granja La Esperanza marking its establishment almost a century ago by their grandparents. Years of dedicated varietal cultivation and innovative processing techniques have consistently yielded award-winning cup profiles season after season.
Nestled on an elevated foothill of the Colombian Western mountain range, this rare Geisha variety benefits from the superb climates and fertile volcanic soils of its surroundings. The result is a coffee of remarkable depth and complexity, boasting an elegant cup profile. Thanks to its strategic location near the equator, Cerro Azul enjoys multi-flowering bushes and cherries that attain optimal sugar levels.
Exclusive to Cerro Azul, this farm is dedicated solely to the production of Geisha coffee. The microclimate, formed by the interplay of cool Pacific air and warm valley breezes, is ideal for cultivation. Moreover, the rich volcanic soils further enhance the exotic qualities of this varietal.
Operating on a year-round basis, Cerro Azul employs sustainable practices that are ingrained in Granja La Esperanza's core business ethos. The farm's hyper-productivity serves as a testament to their commitment to sustainability.
This particular batch of Geisha undergoes a meticulous honey processing method, starting with the careful selection of cherries based on their brix measurements. The cherries are depulped without water and dried using a combination of patios and silos. Employing varying layered formations during the drying process fosters the development of flavors and aromatic compounds crucial for crafting an elegant cup profile.
